Ingredients:
- 4 cups Irish soda bread, cubed and slighly stale
- 2 cups mashed potatoes (leftovers work wonderfully)
- 1 large onion, finely chopped
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 stick (1/2 cup) unsalted Irish butter (like Kerrygold)
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 1 cup chicken/vegetable stock
- Salt and pepper for taste
- Parsley and crispy bacon bits for garnish
Instructions:
- Prepare the bread: Cut soda bread into 1-inch cubes and leave them out overnight to dry. If short on time, bake them in the oven at 300°F for 15-20 minutes (Soda bread recipe in this blog post )
- Sauté the vegetables: In a large skillet, melt the butter over medium heat. Add onions, celery and garlic, cooking until softened and fragrant.
- Add herbs: Mix in the thyme, rosemary and sage.
- Combine the base: In a large bowl, combine the cubed soda bread and mashed potatoes. Pour the sautéed vegetable mixture over the top. Gradually stir in the chicken stock until the mixture is moist but not soggy. Season with salt and pepper to taste.
- Bake the stuffing: Transfer the mixture toa greased baking dish. Cover with foil and bake at 375°F for 30 minutes. Remove the foil and bake for an additional 15 minutes to crisp the top.
- Garnish and serve: Sprinkle with fresh parsley and crispy bacon bits, if desired. Serve alongside your Thanksgiving turkey for an unforgettable dish!
